In the winemaking history of Crete, wine is represented by ideogram 131, a symbol found in both Linear B and Cretan Hieroglyphic scripts. SYMBOLO, first released in 2005 to celebrate a great vintage, is produced only in the finest years; 2021, another excellent vintage, represents its 7th edition. Beautifully ripened and concentrated grapes of Syrah, Mandilari, Kotsifali and Vidiano create a harmonious quartet of high aromatic intensity and extensive flavor breadth. The grapes, sourced from our finest vineyards, underwent gentle maceration and were aged for 20 months in new oak barrels. In April 2024, we bottled 3700 bottles of 750ml. A 10-to-15-year ageing of this wine in the bottle will further mature it.
